Step 1: The Fruit Base
In a large, heavy-bottomed pot, combine the cranberries, chopped strawberries, orange juice, and orange zest.
Bring the mixture to a boil over medium-high heat, stirring occasionally. Reduce the heat and let it simmer for about 10 minutes, until the cranberries have popped and the fruit is very soft.
Step 2: Sweeten and Spice
Stir in the sugar, cinnamon, nutmeg, and cloves until the sugar is completely dissolved.
If you are using powdered pectin for a firmer set, whisk it into the sugar before adding it to the pot to prevent clumping.
Step 3: The Rolling Boil
Bring the mixture back to a full, rolling boil that cannot be stirred down. Boil hard for 1-2 minutes, stirring constantly to prevent scorching.
