Ingredients :

1 kg (2.2 lb) baby potatoes or fingerling potatoes, halved lengthwise

3 tablespoons olive oil (or melted butter)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced (optional for extra flavor)

1 teaspoon paprika (smoked or sweet)

1 teaspoon dried Italian herbs or thyme/rosemary

Salt and freshly ground black pepper, to taste

2 tablespoons chopped fresh parsley, for garnish

Optional: a pinch of chili flakes or lemon zest for extra heat

Preparation time: 15 minutes

Cooking time: 40 to 45 minutes

Total duration: approximately 1 hour

Servings: 4 to 6 as a side dish
