Crispy Roasted Potatoes with Parmesan

1. Preheat the oven

Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper or lightly grease it.

2. Prepare the potatoes

Wash and dry the potatoes thoroughly (no need to peel them).

Cut them in half lengthwise. This creates a flat surface for maximum crispiness.

Dry the cut side with paper towels to remove excess moisture (aids cooking).

3. Season the Parmesan mixture

In a small bowl, mix:

Parmesan cheese

Paprika, Italian herbs, salt and pepper

Optionally add garlic, chili flakes or lemon zest.

4. Prepare the pan

Pour the olive oil or melted butter evenly over the baking sheet.

Spread the herb and Parmesan mixture evenly over the oiled surface.

Place each potato, cut side down, on the cheese mixture.

Press gently to ensure the potatoes are in full contact with the cheese layer.
