Step 1: Prepare the tomatoes:
- Clean your tomatoes thoroughly before cutting them into thick slices .
- Then transform them into a smooth puree using a blender .

Step 2: Reduce the puree:
- Transfer your mixture to a large pot and bring to a simmer.
- During cooking, regularly remove the scum that forms on the surface.
- Continue reducing until you obtain a well-concentrated texture

Step 3: Packaging in jars:
- Sterilize your glass containers in boiling water and then let them dry naturally.
- Fill them with the still-hot puree , adding a few basil leaves to enhance the aromas.
