Crispy Mashed Potato Cakes Recipe
These crispy mashed potato cakes are a delicious way to use up leftover mashed potatoes! They are golden brown on the outside and creamy on the inside.
Ingredients:
2 cups mashed potatoes (leftover or freshly made)
1/2 cup shredded cheddar cheese (optional)
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour (or breadcrumbs)
1 large egg, beaten
2 tablespoons chopped green onions (or chives)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter (or oil) for frying
