👩‍🍳Preparing Provençal tomatoes:

🔪Step 1: Preparing the tomatoes

  1. Preheat the oven to 180°C  (fan-assisted oven preferred).
  2. Wash the tomatoes, cut them in half horizontally, then carefully remove the pulp and seeds with a spoon.
  3. Lightly salt the inside of the tomatoes and turn them over onto a wire rack or paper towel for 10 minutes to drain.

🌿Step 2: Preparation of the Provençal stuffing

  1. In a bowl, mix the breadcrumbs, chopped garlic, parsley, herbes de Provence, a pinch of salt and a turn of the pepper mill.
  2. Add  2 tablespoons of olive oil  and mix well until you get a smooth sandy texture.

🍅Step 3: Assembly and cooking:

  1. Arrange the tomato halves, cut side up, in a lightly oiled ovenproof dish.
  2. Fill each tomato generously with the stuffing.
  3. Drizzle the top of each tomato with the  remaining 2 tablespoons of olive oil .
  4. Bake for  25 to 30 minutes , until the surface is golden brown and crispy.
