1. Juice the Lemons
- Roll the lemons on a countertop to loosen the juice, then cut them in half.
- Squeeze the lemons using a citrus juicer or by hand, straining out any seeds.
- Measure out 1 cup of fresh lemon juice and set aside.
2. Prepare the Pineapple Juice:
- If using fresh pineapple, blend chunks of pineapple in a blender until smooth, then strain the mixture through a fine mesh sieve to extract the juice.
- Alternatively, use store-bought unsweetened pineapple juice for convenience.
3. Make the Simple Syrup:
- In a small saucepan over medium heat, combine 1/2 cup sugar with 1/2 cup water.
- Heat, stirring occasionally, until the sugar dissolves completely (about 2–3 minutes). Remove from heat and let cool.
4. Combine the Ingredients:
- In a large pitcher, combine the fresh lemon juice, pineapple juice, and cooled simple syrup.
- Add 4 cups of cold water and stir well to combine.
- Taste and adjust sweetness or tartness by adding more sugar, lemon juice, or water as needed.
5. Chill and Serve::
- Refrigerate the lemonade for at least 30 minutes to chill thoroughly.
- Serve over ice, garnished with pineapple slices, lemon wedges, or fresh mint for an extra touch of flair.
Optional: Make It Sparkling:
- For a fizzy version, replace 2 cups of water with sparkling water or club soda just before serving.
- Stir gently to combine without losing the bubbles.
