1. Juice the Lemons

  1. Roll the lemons on a countertop to loosen the juice, then cut them in half.
  2. Squeeze the lemons using a citrus juicer or by hand, straining out any seeds.
  3. Measure out 1 cup of fresh lemon juice and set aside.

2. Prepare the Pineapple Juice:

  1. If using fresh pineapple, blend chunks of pineapple in a blender until smooth, then strain the mixture through a fine mesh sieve to extract the juice.
  2. Alternatively, use store-bought unsweetened pineapple juice for convenience.

3. Make the Simple Syrup:

  1. In a small saucepan over medium heat, combine 1/2 cup sugar with 1/2 cup water.
  2. Heat, stirring occasionally, until the sugar dissolves completely (about 2–3 minutes). Remove from heat and let cool.

4. Combine the Ingredients:

  1. In a large pitcher, combine the fresh lemon juice, pineapple juice, and cooled simple syrup.
  2. Add 4 cups of cold water and stir well to combine.
  3. Taste and adjust sweetness or tartness by adding more sugar, lemon juice, or water as needed.

5. Chill and Serve::

  1. Refrigerate the lemonade for at least 30 minutes to chill thoroughly.
  2. Serve over ice, garnished with pineapple slices, lemon wedges, or fresh mint for an extra touch of flair.

Optional: Make It Sparkling:

  1. For a fizzy version, replace 2 cups of water with sparkling water or club soda just before serving.
